World Café Asia 2 Ep 2 Malacca | TLC | 707 | 18 August 2013 | 11pm | The Malaysian city of Malacca is famed for its Peranakan heritage – descendants of early Chinese migrants who settled in Penang, Malacca and Singapore, inter-marrying with local Malays. The resulting Nyonya cuisine is the blending of Chinese ingredients and wok-cooking techniques with spices used by the Malay community. The food is tangy, aromatic, spicy and herbal with key ingredients like coconut milk, galangal, pandan leaves, lemongrass and cincaluk – a powerfully flavored, sour and salty shrimp-based condiment that is typically mixed with lime juice, chillies and shallots. Setting it apart from its other Peranakan counterpart Penang, is its use of coconut milk – Penang being further north shows Thai influences, such as more liberal use of tamarind and other sour ingredients. Adding to this Peranakan influence is also the Portuguese colonists who contributed dishes like Devil’s Curry to the town’s already rich cuisine. Bobby explored the charming Malaysian city of Malacca in a wildly decorated trishaw and discovered the Straits Chinese culture and its influence of food here which can be seen in dishes such as the easily available Nyonya Laksa and Nyonya kuih. Bobby met up with Florence Tan, affectionately known as the “Queen of Nyonya Cusine” who brought him on a Peranakan tour starting with the Baba and Nyonya Museum, to Charlie’s where he learned about the preparation of the Nyonya cakes and snacks, to street stalls famed for its Nyonya cuisine. Bobby then visited A Formosa, a fortress built by the Portuguese during its reign to protect city from invaders. It is among the oldest surviving European architectural remains in Asia. Bobby also visited The Stadhuys that was once a centre of the Dutch administration in Malacca. It is believed to be the oldest Dutch building in the East. From history to trade, Bobby decided to try his hand at fishing with the local fisherman and set off in the ocean to catch some fish! He then attempted to sell his catch at the local fish stall but was unfortunately not very successive! Sticking to what he knows best, Bobby met up with Michael, owner of Seafarer to learn how to make the very famous and popular dish – Ikan Bakar which is simply barbequed fish with lots and lots of special chili sauce! A weekend in Malacca is incomplete without a visit to Jonker Street night market. So with Lynette in tow, Bobby ate his way through the various street food available in this colorful night market. After learning all about the rich Peranakan culture, Bobby attempted his hand at making a famous Peranakan dish – Ayam Buah Keluak with the help of Marcia, the owner of Bibik Neo, a popular Peranakan restaurant. But Kuala Lumpur is fighting back. The city is mounting a daring construction project to try to bring the mighty floods under control. The plan calls for fours lines of defence. The first: Massive floodgates to stop the main rivers in their tracks. The second: Six kilometres of canals to divert the flood waters away from Downtown KL. The third: The world’s first SMART tunnel – a giant storm water pipe that doubles as an underground highway. The fourth and final line of defence: Huge ponds to store the water until the floods recede. It will be an epic battle of man versus nature; fought on the front lines of a modern city. If they can pull it off it will be a man made marvel, but it won’t be easy. The floodgates must be built in the rivers during the rainy season; the canal design must compensate for serious lack of space; and the ponds are a disaster waiting to happen if they cannot overcome the unstable soil conditions. But it’s the SMART tunnel that’s the most challenging part of this epic plan. A dual purpose tunnel has never been built before “…We were definitely venturing into the unknown really in engineering terms, in many aspects of the project…” If that weren’t enough, Kuala Lumpur is built on karst limestone; a dangerous network of cavities that can collapse without warning. If the engineers make any mistakes tunnelling through this underground minefield, giant sinkholes could open up in the city above. The construction elements are not the only challenge. Kuala Lumpur can go from situation normal to a flood in less than two hours. For this epic battle to ultimately succeed, they must also install a flood warning system faster than anything that has come before. |

Marcus is a regular competitor in the Rainforest Challenge and Jaime gets to drive one of these hybrid beasts. Heading south to Bernam River, Jaime then meets Capt Andreas, who runs a flight school. Jaime leaves the familiarity of the ground and two wheels as he takes her up in a Cessna to teach her how to fly. She then races the plane along the runway before heading to Frasers Hill, a colonial hill station that time has forgotten. Performers at the event included the talented kid Rohanpreet along with Sumedha and Harpreet (all from Sa Re Ga Ma), Jai and Shakti (from DID) and Sushant (aka Manav) and Ankita (aka Archana) from Pavitra Rishta.
The opening act was a spectacular performance by dancers from Malaysia Tourism, the main sponsor of the event. The highlight of the evening was Jai and Shakti, whose electrifying performance not only impressed the crowd but also left them wanting more. They were mobbed by the crowd when they went down the stage to meet them. The evening got more exciting with the appearance of Malaysia’s Bollywood icon, Datuk D.J. Dave. The magnificent show ended with all the artistes performing to the tunes of the popular “Jai Ho” with the audience jumping in joy.

Where radios have been replaced by satellite television networks, newspapers by the internet and trishaws by rapid transport networks. Rice fields and rubber plantations have been replaced by factories and cyber cities. You will see famous names from Malaysia’s past take their place but it also introduces a cast of less known, though no less compelling personalities.
